Brazilian & Colombian Blend

When we started in 2016, we were proudly brewing a beloved local Atlanta roaster called Octane Coffee. A year later, when their next chapter began, we found ourselves searching for a new partner. Our founder, Daniel was connected by neighbor with a college roommate who had launched his roasting company, Firelight. A few cuppings later, our house espresso "Buttah" was born.

Built on Brazil and Colombia, Buttah became the staple at our Stone Mountain flagship; a crowd favorite known for its lush texture, bright-brown sugar sweetness, and buttery finish. For seven years, Firelight roasted it with remarkable consistency and care before we took the reins ourselves, committed to honoring what made it special while refining it through our own lens.

Today, Buttah has a new name "Berht" which means bright and it still carries that same foundation: sweetness like aged sugarcane, body like rich melted butter ~ lifted by a brilliant grapefruit acidity that lights your mouth, bursting with citrus fire!

The profile was inspired by a nostalgic dessert from Daniel's grandfather, Gilbert, (the ancestral root behind our grand name “gilly”) It pays homage to legacy while blazing its own trail. Its flavour profile shines like the sun-soaked jewels within a juicy grapefruit which would be folded with condensed milk.

Citrus and cream in perfect tension, on paper it shouldn't work but this does and here's why: Condensed milk is high sugar content and binds water and stabilizes the milk proteins, so instead of separating into harsh curds, the mixture thickens smoothly (almost like a custard). At the same time, fat softens the sharp edges of the citrus, and sugar tempers the sourness while amplifying the fruit’s aromatics. What could clash chemically becomes balanced sensorially: bright acidity wrapped in sweetness and cream.
