Coffee has always belonged at the table.
Most of us already understand this subconsciously. We grew up pairing breakfast with coffee a warm cup beside eggs, toast, butter, conversation, and slow mornings. But somewhere along the way, coffee became confined to the beginning of the day. A quick boost. A caffeine delivery system. Grab-and-go fuel.
We believe coffee deserves a much deeper place within the culinary experience.
Coffee is layered, complex, comforting, social, and honestly… practical. It’s a natural digestive aid, something many cultures have embraced for generations. A cup after lunch or dinner just makes sense. The only issue? For many people, the caffeine doesn’t.
That’s where this blend comes in.
At Gilly, we created the NBSC — the No Buzz Social Club — for those who are highly sensitive to caffeine or simply want the comfort and ritual of coffee without the overstimulation. This blend lives somewhere beautifully in between. A slight step up from our NBSC, it combines our Brazilian coffee with our decaffeinated Colombian to create something balanced, smooth, approachable, and wildly enjoyable.
To be completely honest, this coffee was not the plan.
It started as a beautiful mistake.
We’ve been training one of our O.G. Gilly customers, Lisa, to roast coffee. We first met Lisa during the grand opening of our Stone Mountain location during a three-day celebration. One of those days included a public cupping hosted outside the café. We were all gathered around tasting what would eventually become our house blend (once called “Buttah,” now known as “Berht").
Then came Lisa.
She was walking by, curious as ever, trying to figure out why a group of people were standing outside slurping coffee so loudly. Juanita — our owner’s mum — called her over to join us, and the rest became history. Lisa never stopped coming around.
Now she’s part of the Gilly gang as our assistant roaster.
After many training sessions, we finally trusted her to roast a few batches on her own. She absolutely crushed it. The roast was phenomenal. Only later did we realize the blend had been built with the wrong Colombian (our decaf instead of the regular).
But as we always try to do at Gilly, we flipped the wrong into a right.
The result is one of the smoothest and most enjoyable coffees we’ve had in a while. Balanced energy. Vibrant + full flavor. Easy drinking. The kind of coffee you can enjoy after a meal without "crashing" feeling overstimulated or anxious afterward.
It’s not a common blend, but it’s one we’re hoping to keep in our catalog. It’s an incredible entry point for people beginning their home brewing journey, adds a unique layer to our lineup, and honestly… it’s just wagon delicious.
